Bomb of vitamins!
150 gr of Black eye peas
1 fresh onion
Boil the black eye peas for about 20 minutes with a bit of salt and pepper.
Distill the water and after 10 minutes put them in the fridge.
The peas have to be cold when you make the salad..
Chopp your vegetables mix them with the peas and serve with olive oil and balsamico.
Some oregano salt and pepper would match perfect!
