Fava beans with smoked trout





In Greece you can find yellow lentils or fava everywhere.
In Germany and other countries you can find it at bio shops or Turkish or more cultural shops.
Its easy anyway....
Maybe you will find it with the name Asian lentils. Or Broad beans.

  • Fresh fava beans are an excellent source of folates. 100 g beans provide 423 µg or 106% of folates. Folate along with vitamin B-12 is one of the essential components of DNA synthesis and cell division. Adequate folate in the diet around conception and during pregnancy may help prevent neural-tube defects in the newborn baby.
  • They also contain good amounts of vitamin-B6 (pyridoxine), thiamin (vitamin B-1), riboflavin and niacin. These vitamins function as co-enzymes in cellular metabolism of carbohydrate, protein, and fat.
  • In addition, broad beans are one of the fine sources of minerals like iron, copper, manganese, calcium, magnesium. At 1062 mg or 23% of daily recommended levels, fava are one of the highest plant sources of potassium. Potassium is an important electrolyte of cell and body fluids. It helps counter pressing effects of sodium on heart and blood pressure.
Do I have to talk about trout ?

A cooked serving of farmed rainbow trout contains approximately 981 milligrams of the omega-3 fatty acids eicosapentanoic acid, or EPA, and docosahexanoic acid, or DHA. This amount far exceeds the 250 milligram per day minimum that Seafood Watch recommends. It also f.ulfills the World Health Organization recommendation of 300 to 500 milligrams of a combination of EPA and DHA each day. A diet high in omega-3 fatty acids is linked to a decreased risk of cardiovascular disease, hypertension, high blood cholesterol and certain types of cancer. 
  • vitamin D, calcium, iron, and zinc
  • vitamins and minerals, including vitamin B complex

And its Low Fat.



Boil 150 gr fava beans with 500 liter water. Add salt and pepper, one whole onion. And olive oil.
Its needs about 20 minutes after the water starts boiling.
When you taste it and fava beans feel ready and that you can eat them put it in less fire and let it
cook slowly slowly so it become like a purree.

Remove from fire and serve in a plate with some fresh olive oil, juice from one lemon chopped in cubes onion and parsley.
You can add some oregano or some caper.


Then just add the smoked trout and enjoy a very healthy and tasty dinner.

White table wine or ouzo is an excellent choice. 
Or some fresh homemade lemonade.
